Courgettes and mushrooms risotto with Dolcelatte®
Serves 4
Prep: less than 30 minutes
- 1 tbsp olive oil
- 1 small red onions, chopped
- 1 glass of white dry wine
- 2 medium courgettes
- 100g mushrooms
- 200g risotto rice
- 1 litre of stock
- 100g Galbani Dolcelatte® classico
- Salt and freshly ground pepper
- 50g rocket salad
- Heat the olive oil in a saucepan; add the chopped onion.
- After a couple of minutes, add the rice and sauté for a few more minutes, then pour white wine into it.
- Cook the rice for 5 minutes and add the sliced courgettes and mushrooms, adding some broth from time to time.
- Cook for another 10-12 minutes.
- Pour the rice in a serving platter, garnish with cubes of Dolcelatte® classico, a few leaves of rocket and a pinch of freshly ground pepper.
